Hello friends!! I am in much better spirits today
One thing I like to do when I’m feeling a little glum is make a list of the things I’m looking forward to. It helps me see past my blue moments and realize there are some bright spots in my future. When going through my list, I realized all of this week’s bright spots involve Chris! I haven’t seen him in almost a week, and it was during all my graduation madness. So I thought since I shared the scoop on my job the other day, it would be fun to tell you about Chris and I! I’ve never really divulged all that much about it besides mentioning him here and there. I apologize in advance Chris if I embarrass you at all!
Chris and I were actually set up by a mutual friend. I worked with her at Starbucks at the time, and Chris was best friends with her fiancée (now husband). I had recently broken up with my live-in boyfriend a few months earlier and was so not in the market for another relationship. But one busy night at work, my friend asked me if I’d be interested in meeting Chris. Usually, I would have said no, but she caught me while I was in my “latte zone” and I said yes, not really realizing what I had agreed to.
Our first date was a double date with our mutual friends to a pool hall. The first thing I noticed about him was his blonde hair and badass leather jacket. My type!
Chris asked me out again a couple days later, and we just kept going on dates and hanging out, until well, now! Three and a half years later. Chris has since said he had no clue if I even liked him at first, he just kept asking me out because I kept saying yes
I’d say the most notable thing about us is our age difference, there’s eight years between us (although Chris usually corrects me with 7 1/2…) I was 19 when we first met and he was 27. In all fairness, I thought he was younger, and he thought I was older. I like to say he’s a little immature and I’m a little mature, so we meet somewhere in the middle
Chris works as a “lead tech” (mechanical engineering background) in the energy sector in a city about an hour from here. He does shift work, which is a combo of 12-hour day and night shifts. He comes home and stays with his parents on his days off, so that’s why he’s not around, then all of a sudden around a lot!
And before you can even ask, we’ve both agreed we’re never going to get married. To us, it’s a tradition that holds no importance on our relationship. We are perfectly happy just being ourselves

So that’s enough of that business, time to get on to the food, no?

As promised, a crumbly breakfast cookie. I could tell today was going to be one of those “hungry days” when it didn’t last me the usual 3+ hours.
I skipped the snack and went straight to the meal.
Looks at all those egg whites on that english muffin! I just used what was left in the box, maybe 5 egg whites in total? With a little laughing cow it was a fluffy dream!
I eventually got around to my snack.

Mango and cottage cheese. I realized while eating this that those little cottage cheese containers are only 116g when one serving is usually 125g. I’ve been gypped!!
I thought long and hard about what I was reeeeally craving for lunch, and came up with this:

It was goooood. I love eating what I really want, but in a relatively healthy way!First, the grilled cheese sandwich, which I haven’t had in for-ever. Just a slice of cheddar with a couple scraps of swiss sandwiched between some whole grain and properly grilled. Don’t let those scrambled eggs fool you. It’s actually one egg and one serving firm tofu scrambled with a little plain almond milk and nutritional yeast. I’ve only just started eating firm tofu (as opposed to my usual extra-firm) and think it’s great for mixing with eggs. Their textures are almost identical. Oh yes, and I can’t forget the juicy plump strawberries!
After satisfying my belly, I checked in with my body to see how it was feeling. It wanted a nap. I haven’t napped in soooo long out of fear it would keep me up at night. I conked out for an hour. I wouldn’t say I woke up refreshed per se, but it at least gave me the motivation to go to the pool. So that’s something.
I munched on Larabar about an hour before heading out.

My wonderful roommie Meghan moved out yesterday (insert stream of tears here). She landed an awesome job at the zoo in our hometown, so she moved in with her parents for the summer. When I opened up our bar box (ie a shoe box we throw all our random nutrition bars in) I saw she had left me three larabars from her Costco stash before taking it with her! Seriously, is that not the sweetest thing or what? I will miss Meghan a lot. We’ve been best-friends since the age of 6, so living with her was like living with family. Pfft, she is family.
Anyways, I managed to get in an awesome swim today. It was just what I needed! One of the wonderful people from The Daily Plate (hi!) suggested the site http://www.swimplan.com/ to me. It’s a great site that gathers your swimming info then generates a workout for you. Here’s the one it gave me, which I did almost to a tee.

Especially since work is getting in the way of my lessons…
I wasn’t as starving as I usually am after a swim, most likely because I’d already eaten a whole bunch of food today. Dinner was light-ish.

Well that’s all you’re getting from me tonight. Felt like a long post! I’m off to relish in the joys of having no school work to do. It’ll never get old!!

Such a cute story. Matt is older than I am too, by 6 years. I was young when we met! I don’t think it’s an issue, like you said…we women tend to be more mature anyway

I’m addicted to those egg white/LC/muffin combos lately, too! They taste like comfort food but without all the calories
I can’t tell you how awesome it is to hear about someone else in a serious relationship who has no interest in marriage. I’ve never seen myself getting married but my boyfriend of three years and I are constantly being faced with the marriage question. We already live together and share everything so I don’t see the point (and frankly weddings kind of freak me out). But I hate the assumption some people make that I’m just waiting around for a proposal, I find it a bit insulting. It’s nice to see that you two are just happy as is, like we are.
Also, thanks for the Swimplan link, I’m trying to do more regimented swim workouts so this will be really helpful.
I use swimplan.com too! The only thing I wish you could do is specify whether you want to do an endurance workout with long sets or a speed workout with short sets. I find that the endurance workouts are few and far between, so I’ve just saved one that I like instead of testing my luck.
It was fun to read about you and Chris…so sweet! Thanks for the swimming link. I need to structure my swim workouts some, so that I am getting some harder swims in. This might help a lot!

Hear, hear for living in sin! I’ve been with bf now for 2.5 years and I love it just being us- no marriage ties. I do see us getting married eventually but it’s definitely a reluctance on my part. I don’t want kids- ever- so I don’t see a need for marriage on that point. If anything, think engagement rings are pretty
