I made a mean frittata tonight. One serving (about half the pan) has 300 calories and 42 grams of protein.

First, I sauteed 4 mushrooms, 1/2 a red pepper and a handful of spinach. While doing that, I mixed together 3 eggs, 6 egg whites, chopped green onion, 1 can low-sodium tuna and about 1 oz shredded cheddar cheese. I poured that mix into the pan with the veggies and cooked on medium-low heat for about 10 minutes. Then I stuck it under the broiler, on the top rack, for about 3 minutes. I love both eggs and tuna, and they’re even better when served together! On the side I had some yellow and green beans.
My communications class was pretty uneventful tonight. I spent most of it thinking about what I was going to make when I got home

1/3 cup cottage cheese, 1 chopped peach, about 1/3 cup yogurt and 1/4 cup Fibre 1. This peach was pretty good considering it was shipped from some far away warm place! Actually, it was pretty mild today. It went up to +1 celsius!!! I didn’t even have to wear a hat! It’s supposed to be around freezing all week, thank goodness. The bitter cold was starting to depress me.
I finished reading Eat This, Not That: Supermarket Survival Guide (my reading is pretty slow when I’m in school). It was pretty good! Some repeats from the first book, but overall, full of good info. The best part is that there’s a “food additive glossary” in the back that describes a lot of the unpronouncable ingredients in our foods. I tried to find it on their website, but I don’t think it’s up there. Instead, I found this even better list from Centre of Science for Public Interest: http://www.cspinet.org/reports/chemcuisine.htm
